Nutty Choco Banana Bread Recipe


Bananas are highly in potassium and the riper it gets the sweeter it is. So instead of throwing them away making it into this delicious recipe that you wont forget. The addition of nuts only increases its deliciousness and nutritious value and with chocolate this recipe goes over the top



The below recipe makes one loaf of banana bread

Ingredients:

Dry ingredients:
1 cup milk chocolate chips
1 cup of walnuts [I used a mix of almonds and walnuts]
1 3/4 cup or 230 gms of plain flour
1 cup or 200 gms sugar
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon cinnamon powder
1/2 teaspoon ground nutmeg
Wet ingredients:
2 large eggs, lightly beaten
3/4 cup or 150 gms butter, melted and at room temperature
2 ripe bananas, mashed
1 teaspoon vanilla essence
1 teaspoon of instant coffee dissolved in 3 tablespoon of lukewarm water


Method:
  1. Preheat the oven to 180 degrees C/350 degrees F.
  2. Butter the loaf tin with butter or spray with baking spray and set aside.
  3. Toast the chopped nuts in the oven for 8 mins and let it cool
  4. In a large bowl, mix all the dry ingredients.
  5. In another bowl, mix the bananas, butter and vanilla till combined.
  6. Gently fold in the banana mixture into the dry ingredients along with the coffee using a spatula. Over mixing will make the banana bread rubbery. Hence, mix only until combined.
  7. Pour the batter into the loaf tin and bake for approximately 1 hour. Check by inserting a toothpick into the bread. If the toothpick comes out clean, you can take out the banana bread from the oven and let it cool.
