Spicy Egg Roast Recipe (semi gravy)

Eggs are high in protein and tomatoes are high in vitamins and other nutrients. Tomatoes help in managing diabetes, lowers hypertension, improves vision amongst a few other features and eggs are good for lean muscle

Tip: how to check if tomatoes are good. Tomatoes have to be firm and no blemishes/marks completely

Ingredients:
6 partially boiled eggs
2 medium size Tomatoes
1 bulb Garlic
20 Curry leaves/Kariyapak
1 medium size Onion
10 Green chillies
1 tablespoon Ginger garlic paste
2 teaspoon Salt (adjust based on taste)
4 tablespoons Red chilli powder (2 kashmiri and 2 spicy)
1 tablespoon Mustard seeds
1 teaspoon Jeera
2 inch or thumb size Ginger 
4 Bay leaves
2 big Cinamon sticks
10 Dried red chillies
4 tablespoons Oil (preferably olive oil)
1 tablespoon Ghee
2 tablespoon Butter
3/4 cup drinking Water
1 tablespoon Turmeric powder
1 tablespoon Dried oregano or mixed Italian dried herbs
1 bunch or 1 cup Cilantro or Kothmir
1 Pinch of sugar

Method:
1. Boil the eggs in advance and let it cool
2. Chop the onion, ginger, garlic and green chillies into small pieces. Slice the tomatoes into thin pieces
3. Place a pan on the stove, Put on the heat to high
4. Add the oil and ghee/butter. Let the oil get hot
5. Add the mustard seeds and jeera. Let it pop for about 5 seconds
6. Add the chopped onion and let it cook till its translucent. It will take exactly 2 minutes
7. Add the chopped garlic, ginger and green chillies. Mix well and cook for 2 minutes
8. Tear the dried red chilli into pieces before adding. Add the bay leaves and cinnamon sticks and reduce the heat to medium. Mix well
9. Add the curry leaves, ginger garlic paste, turmeric powder, red chilli powder and salt. Mix well. Cook for 5 minutes 
10. Add the dried oregano or mixed Italian dried herbs. Mix well
11. Add the tomatoes and a little water. Water to avoid the sides from burning. Cook for 5 minutes
12. Add the cilantro or kothmir. Mix well and let it cook for 1 minute
13. Add a little more water and some salt. Give it a mix and let it cook for 10 minutes
14. Add the boiled eggs and bury them in the gravy (Cover the eggs with the gravy). Cook for 10 minutes
15. Add a pinch of sugar. Mix well
16. Add the butter. Put off the stove. Keep mixing till the butter is fully dissolved. Rest for 5-10 minutes and then serve
