Special Mushroom Pulao - Easy Recipe


This is a very healthy recipe and can be made for 4 people. Mushrooms reduce blood pressure and cholesterol levels plus have no fat and are low in carbs. Basmati rice is low in calories, gluten free, cholesterol free and is low in sodium.

Ingredients:
1 box/ 250 gms Mushrooms (Button), chopped
1 cup/ 220 gms Basmati rice
1 tablespoon extra virgin olive oil/butter/ghee
1 teaspoon Jeera
2 Bay leaves
5 Cardamom
6 Cloves
1/2 teaspoon Turmeric powder
1/2 cup/ 100 gms Green peas (frozen)
1 teaspoon Cream/ Full fat milk [optional]
1 tablespoon Salt
1 1/2 cups of Water

Method:
1. First, wash the rice (atleast 3 times or till the water is clear) and then let the rice soak in water.
2.  Heat the oil in a pan. Add the jeera and let it cook for a few seconds.
3. Then add the cardamom, cloves and bay leaves and let it cook for 30 seconds maximum.
4. Add the chopped mushroom and give it a mix.
5. Add the salt, give it another mix and cover with the lid for 5 minutes.
6. By this time the water would have come out from the mushrooms. Add the rice and mix well.
7. Add the water and the green peas. Mix well and cover with the lid.
8. After 5 minutes add the turmeric powder and the cream/milk. Give a mix, reduce the heat to low and cover with the lid.
9. After 5 minutes give the rice a good mix and cover for another 5 minutes.
10. By this time the water would have evaporated and the rice should be almost cooked. The rice should be damp.
11. Put off the stove and let the rice sit for atleast 5 minutes in the same vessel before serving.
